The sourdough cake that convinced my husband he likes cake

My discard jar has hit that point where it's less "useful byproduct" and more "passive-aggressive reminder that I haven't baked bread in five days." So this week it's going into cake. Three of them, actually.

First up, the Lemon Blueberry Sourdough Cake. Properly lemony, not vaguely-citrus lemony, packed with blueberries that mostly stay where you put them, and finished with a glaze that sets just enough to still be a bit sticky. It doesn't last long in this house. Seb, who maintains he "doesn't really do cake," went back for seconds without a word of explanation.

Then there's the Sourdough Pineapple Upside Down Cake, which is basically a small act of theatre. You build it upside down, bake it, then flip the whole thing onto a plate and hope for the best. Mine came out glossy and caramelised first try, which felt like a personal win.

And if your courgette (zucchini) plants have started their annual takeover, the Sourdough Courgette Loaf Cake is where the surplus should go. No cinnamon here, that's a cold-weather spice and it's July, just lime zest and a sharp glaze that keeps it tasting like summer instead of a vegetable you're trying to hide.

All three use discard, not active starter, so there's no feeding schedule to plan around. Just scrape the jar, measure it out, and get on with it.
